My Portuguese Cooking Adventure

Hey everyone..sorry I have not written for a few days! Recently there was a death in my family and so I was not really in a writing mood, plus I couldn't really think of what to write anyways.

This week I tried some portuguese recipes from this cookbook that I got from the library. The recipes were called" Twice cooked potatoes" and "roast chicken with piri piri."

They both turned out to be absolutely delicious! The potatoes did take awhile, since you were suposed to boil them first, and then "slip" off the skins ( like its that easy). I am wondering if I peeled them before hand if it really would have made a difference.

First I had to make piri piri sauce. According to this book there is probably hundreds of ways to make piri piri, everyone kinda does it their own way. This book had 2 recipes and I made the simplest one where you basically just crush up some chili peppers and garlic and put it in a jar with olive oil and a bit of salt.

For the potatoes, you basically boil them, then take the skins off, cut them up and fry them with olive oil and butter, then adding salt and pepper (however you like) and coriander.

For the chicken, you basically take a few spoonfuls of the piri-piri, some coriander and lemon juice and marinate it in that for 2 hours then you put it in the oven! Pretty simple recipes! Here are the pictures.


I forgot to take a picture of the chicken by itself, so I just took a pic of both after I divided them into containers. It looks pretty good eh? If anyone is interested in the exact recipes, let me know and I will post them soon :)
